Baby Green Leaf: an autumn recipe
The Baby Green Leaf belongs to the Astaraceae family and is characterised by round, bright green leaves. It has a sweet and delicate flavour and is excellent with white meats, fish or fresh cheeses. The Baby Green Leaf is rich in fiber, vitamins A, C, K, and E, in mineral salts that confer it diuretic properties and is highly digestible.
Today we suggest a light and autumn recipe, perfect for having lunch at the office.
Baby Green Leaf and Bacon
Ingredients
- 2 slices of bacon
- Evo oil q.s.
- 1 slice of diced wholemeal bread (or cereals if you prefer)
- Basil q.s.
- Baby green leaf q.s.
To season
- Half a teaspoon of mustard
- 1 tablespoon of extra virgin olive oil
- Balsamic vinegar q.s.
- Lemon juice q.s.
- 1 pinch of salt
- Black pepper q.s
How to do
Mix all the seasoning ingredients in a bowl. Seal with plastic wrap and keep in the fridge. In a non-stick pan, add the bacon and let it brown without adding oil. Use the pliers to pick the bacon and put it in a plate and let the diced bread brown in its fat, until it’s golden and crispy. Put everything in a bowl.
At this point, cut the bacon into dice and add it to the toasted bread and the basil leaves. Wash the salad and add the seasoning you kept in the fridge, the bacon and the toasted bread. Store the salad in an airtight container and bring your lunch to the office. Enjoy your meal!
